Believe me, it's just a masterpiece! Juicy, fragrant, incredibly cozy and hearty vegetarian lasagna with bubbling sauce, ruddy cheese and amazingly delicious filling.
- All vegetables are ground in a blender, which gives the filling a texture similar to minced meat (but much tastier).
- A layer of creamy mascarpone cheese with garlic adds piquancy and tenderness to the dish.
- Even my two-year-old daughter, who usually doesn't eat vegetables, asked for supplements!

Who would have thought that vegetarian lasagna could be so exciting and satisfying?
The dish is based on a simple but very tasty vegetarian bolognese made of zucchini, mushrooms, onions, carrots and walnuts (they can be replaced with any other vegetables and nuts to your taste). For marinara sauce, I prefer to use ready-made to save time.
The vegetable bolognese is placed between the lasagna sheets (pre-boiled so that the oven does all the work for me), and several layers of cheese are added on top, including tender mascarpone with grated garlic, which gives the dish a special piquancy.
The aroma, texture, atmosphere in the house during baking — all this is simply fascinating!
This lasagna is not only very tasty, but also very satisfying.

We experimented with a cheese-free version, and it turned out quite tasty, but Bjork did not approve of this option. I think cheese is needed to make the lasagna more dense and satisfying.
But don't get upset! If you are a vegetarian, try replacing the cheese with vegan bechamel from the book "Kitchen for Plants Only" by Gaz Oakley. It perfectly replaces mascarpone and other cheeses in lasagna layers.
You can also use vegan cheeses or vegan cream cheese, such as Tofutti.

Is it possible to chop all the vegetables at once?
Yes, if your blender is powerful enough! But I prefer to chop vegetables in portions, because: 1) my blender does not hold all the vegetables at the same time, and 2) it allows you to mix soft and hard vegetables to get a more uniform consistency.
Is it possible to freeze leftovers?
Yes, store them in a freezer container.
How to replace mascarpone?
You can use ricotta cheese.
Is it possible to cook lasagna vegan?
